Dark Chocolate Dipped Peanut Butter Cookies

May I just say, it's a lovely day for baking in the kitchen! Every so often (or possibly more often than that) I have the urge to stir up some treats. This time, I decided to put my own spin on an old classic. Peanut butter is practically a food group in my family. Since everyone else was in the mood for a salty snack, and I was in desperate need of chocolate, I guess you could say we made a compromise. And by compromise I mean everybody wins!
Dark Chocolate Peanut Butter Cookies, makes 20-22 cookies

Cookies: 1/2 cup shortening, 1/2 cup peanut butter, 1/2 cup sugar, 1/2 cup packed brown sugar, 1 egg, 2 tablespoons milk, 1 teaspoon vanilla, 1 3/4 cup all purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt

Cream shortening and peanut butter; gradually add sugar and brown sugar, beating until light and fluffy. Add egg, milk, and vanilla. Combine flour, baking soda, and salt; add to creamed mixture. Roll dough into one inch balls, then flatten with fork to make criss-cross pattern. Bake at 375ยบ for 8-10 minutes. Let cool.

Dip: 5 oz. 60% dark chocolate chips

After cookies have cooled, double broil chocolate chips (click here for tutorial.) Dip cookies halfway in melted chocolate. Place on wax paper and add sprinkles if desired. Let set.
