It's official, my tea obsession knows no bounds. Usually I have a hot cup of tea everyday, but lately I've been wanting something nice and cold (it is August after all!) After coming across a nifty little popsicle mold at the grocery store, I decided to do some experimenting in the kitchen. I'd say it was a success!
Raspberry + Lemon Tea Popsicles, makes 4 servings
Mixture: 2 bags of raspberry tea, 2 bags of lemon tea, 1 1/2 cups of water, 2 tablespoons honey, 1 tablespoon lemon juice, raspberries (optional)
Bring water to a boil. Place tea bags in a heat resistant bowl, then pour boiling water over them. Cover and steep for 5 minutes. Discard tea bags, and stir honey and lemon juice into tea. Fill popsicle molds with raspberries (if desired.) Spoon tea mixture into molds, and insert popsicle sticks. Remove popsicles from molds after freezing for 6 hours.
These not only make a yummy snack, but they also satisfy my tea fix! The popsicles turned out great, and I can't wait to try the recipe with different kinds of tea. Green peach tea popsicles, anyone?
